The Underdog

I’ll give you a hint as to where I was last night…

No, I wasn’t actually at one of the sweet 16 games — but I was over at a friend’s house watching our alma mater make the biggest 3 seed upset in tournament history happen.  Um, yeah, so it was just kinda exciting ;).  Our school isn’t known for being a sports school and we were definitely the underdog.  I’m sure our win screwed up a ton of brackets.  Yay for underdogs!

I poured my Green Monster Smoothie this morning into a glass to signify the win.  That and a mug of joe with organic half and half and light agave and I called it breakfast!

But let’s back up.

Lunch yesterday was a bowl of Bob’s Vegi Soup mix (leftover from the night before).  Somehow, I scarfed it down before I could take a picture of it.  Whoops.  You know what it looks like.

On the side, I had a banana, applesauce and a piece of the organic chocolate Sam brought back from Hershey, PA.  It was lavender blueberry flavored — interesting.  I love the scent of lavender, but have never seriously considered eating it.  I could smell the lavender more than I could taste it and the dark chocolate was awesome.

Dinner was quick and dirty — Pecan Chicken.  I wish I could claim this recipe as my own, but I got it from a Rachael Ray magazine way back.  It only has 4 ingredients (chicken, bread crumbs — which Sam made up for me, pecans, and honey mustard) and it super tasty.  I had to make my own honey mustard though, which was a little tricky, but I managed.  I just combined equal parts honey and mustard.  Boom.  Not rocket science by any stretch of the imagination.

Add a side of cauliflower and we inhaled it and headed to the watch party for the game. (sorry for the crummy photo — we were in a rush!)

Post game, I had a “victory” slice of all natural birthday cake.  I think that was my last piece.  It was good, but this week was a little too sweet — I’m not totally feeling myself and I think it’s because of a sugar influx.  So out of sight, out of mind went the cake.

I’m pretty confident everything fits the “If It Doesn’t Have a Mama” March challenge, but if you don’t think so, you know you’re always welcome to call me out on something! 😉

I’m off to walk the monsters and then later tonight, I’m kicking off my weekend with a 5 miler.  Hope it’s as good as Tuesday’s!

  1. Love your ‘If it doesn’t have a mama’ challenge – something I may think about trying in the future…

    Also in the future – I will be making that pecan chicken – sounds easy and VERY tasty!
